In this workshop we will be sampling examples of green teas from the major tea producing regions of the world. So often gren tea gets a reputation for being overly bitter or astringent and just not properly brewed. This class aims to expand peoples palates and and brewing abilities by showing them how delicious and complex green teas can be when the care and time is taken to brew them properly. Starting with lighter more delicate examples we will work our way through and end with teas that very robust or umami forward. Care will also be taken to talk briefly about different processing styles and cultural traditions and how that affects the final taste.
